In Nonthaburi, central Thailand, Arun Yolpaiboon, 58, and her son Natthanai Kanchanawasa, 21, unpacked their sushi.
As they examined the food, they were horrified to find the shrimp glowing in the dark.
Natthanai held up a boiled shrimp to show how blue it had become. Despite the strange appearance, he ate one of the glowing shrimps.
After eating the glowing shrimp, Natthanai reported no unusual symptoms.
However, the sight of the glowing sushi still left the family frightened. Natthanai said, “Luckily, I have not had any strange symptoms after eating it, but perhaps it was because it was boiled.”

Investigating the mystery of why sushi glows blue
Concerned about the safety of the meal, the family consulted health professionals to understand what had caused the glow.
Dr. Jessada Denduangboripant, an associate professor of biology at Chulalongkorn University, explained that the shrimp likely became contaminated with fluorescent bacteria. This occurred because the seafood was not stored at a low enough temperature.
Dr. Denduangboripant explained, “Normally, seafood can be contaminated with fluorescent bacteria, but they are eradicated by heat during cooking. However, sushi is mostly uncooked, so it should be kept at very low temperatures to limit bacteria growth.”
He added that the glowing shrimp likely had increased bacteria levels due to improper storage.
The professor warned against consuming any glowing seafood. He stated that the bacteria could lead to food poisoning if consumed.
“There are various bacteria on shrimp that need to be examined before they can be considered safe to eat,” he said.
Previously, a woman also spotted similar incident
Arun, a businesswoman, expressed her shock at the incident. She vowed to be more careful in the future when choosing sushi. “This is a surprise lesson for me, and it will affect my decision next time when I’m choosing what food to buy,” she said. “I need to be more careful, or I could suffer from digestive infections or food poisoning.”
